Found my Favorite Cookie! Cranberry White Chocolate Cardamom Cookies

  • 1 Cup of salted butter, softened
  • 1 Cup Sugar
  • 2 tsp ground cardamom
  • 1 egg
  • 1 tsp finely grated orange zest
  • 2½ Cups AP flour
  • ½ tsp Baking Powder
  • ¼ tsp salt
  • ½ Cup finely chopped white chocolate
  • ¼ cup chopped dried cranberries
  1. Preheat oven to 375 degrees.
  2. Beat butter, sugar and cardamom until light and fluffy. Add in egg and orange zest and mix until combined.
  3. In a separate bowl combine flour,baking powder and salt.
  4. Gradually add the flour mixture into the butter mixture. Beat to combine.
  5. Stir in cranberries and white chocolate.
  6. Divide the dough into two parts. Roll into two logs about 2 inches wide. Wrap tightly in plastic wrap and chill for three hours. Wrapped cookie logs can be thrown in the freezer for up to 1 month. Let stand thaw at room temperature for about 30 minutes before slicing.
  7. Slice the logs into ½-inch-thick rounds and place on a parchment covered cookie sheet.
  8. Bake 10 minutes (check after 8 minutes) or until the cookies are nicely browned around the edges.
  9. Remove and place on rack to cool.
