Fiesta Quinoa Salad
A healthy Mexican inspired salad filled with black beans, lime and cilantro.
- 3 cups quinoa cooked
- 1 cup cucumber diced
- 1 red bell pepper diced
- 1 can corn drained
- 1 can black beans drained and rinsed well
- ¼ cup fresh cilantro chopped
- ¼ cup olive oil
- 3 tablespoons fresh lime juice can substitute lemon juice
- ½ teaspoon salt can add more to taste
- 1 teaspoon cumin
- ½ teaspoon cayenne pepper
