This quick and easy homemade chicken noodle soup will taste like you have spent all day cooking. This recipe helped me to keep my new years resolution. It is a simple resolution; meal prep and to eat at home. Sounds easy enough, right? Then why am I not following through? I know the answer is not preparing or planning, winging it at the grocery store and over thinking. Overthinking gets me every time.
Is there anything as comforting as homemade soup?

Every meal should be made with fresh ingredients.

Here is a soup that follows my own rules. I love to pair it with this easy french bread that I have made many times.
Chicken Noodle Soup
Homemade chicken noodle soup comes together easily when using rotisserie chicken. A simple recipe guaranteed to please the whole family.
- 4 cups of cooked chicken
- 4 cups of water
- 32 oz chicken broth
- 2 stalks of celery chopped
- 2 cups of carrots chopped
- 2 garlic cloves chopped
- ¼ cup of onion chopped
- 1 teaspoon of salt or to taste
- ½ teaspoon of black pepper
- ½ teaspoon of oregano
- ½ teaspoon of paprika
- 3 cups of egg noodles
- ¼ cup of parsley chopped
In a large pot over medium heat add in all of the ingredients, except for egg noodles and parsley.
Cook for 15 minutes. Add in noodles and parsley, cook until noodles and vegetables are tender.
This recipe uses rotisserie chicken. For raw chicken, follow the steps, but cook first for 20-25 minutes over medium-high heat, or until chicken is cooked, before adding in pasta and parsley. Then add noodles and parsley, lower heat to medium-low and continue cooking until pasta is done.
