Best Macaroni Salad

I am so pleased to have found a quick and easy macaroni salad that the whole family loves. This recipe is so easy that I just whip it up without thinking – my kind of cooking! The beauty of this salad is that it is not drowning in mayonnaise. I was surprised that the whole family loves this so much because 2 out of 4 of us do not like tuna. The kids gobble it up, tuna and all. This has quickly become my oldest kiddos favourite after paddling snack.

Bring this salad to family gatherings and see everyone trying to guess the secret ingredient. People don’t expect the hint of tarragon and it is a perfect addition. Next time I will be trying this with shredded chicken.

Tuna Macaroni Salad

Ingredients

2 Cups of Macaroni (measured before cooking)

2 ribs of celery chopped

1/2 Medium red onion chopped

1 can of flaked tuna

1/2 Cup of Mayonaise

1 Tablespoon dried Tarragon leaves

Salt and pepper to taste

Instructions

  1. Prepare macaroni as per package directions. Allow cooked macaroni to cool.
  2. Add celery, red onion and tuna to large bowl. Mix to break up tuna. Add cooled macaroni. Mix in mayonnaise. You may have to add more than the recommended 1/2 Cup. Add tarragon leaves and salt and pepper to taste.

    Great recipe but I’d be substituting shredded chicken for the tuna, or using salmon instead. 🙂

    The addition of tuna to the macaroni salad is a great way to add protein and flavour to the dish.
    On top of that tuna is healthy for you.!
