In a recent post, I shared how my family and I are taking meal prep and planning a little more serious. Eating together as a family is a high priority for us, so naturally, choosing our menu plan together quickly followed. The next habit created was prepping the veggies together. Surprisingly, we have had some fun conversations and goofy moments together while cutting veggies for the week… all on a Sunday afternoon. When the kids are involved, we noticed they are more likely to make better food choices. Who would have thought my picky 9-year-old’s favourite vegetable is a brussel sprout!? Or the two kids would happily eat purple cabbage?
One thing my family will never give up is Taco Tuesday. Sometimes I try to mix it up by serving taco salads, tostadas, taquitos or fajitas. Have you ever had a Walking Taco or Taco in a Bag? Walking tacos are popular for fundraising, picnics or camping. The Walking Taco is a bag of nacho flavoured chips, filled with taco toppings such as seasoned meat, cheese, lettuce, tomatoes, onions, pico de gallo, and sour cream. The whole glorious mess is eaten right out of the bag with a fork. When I spotted the new OLD EL PASO Bowls at Loblaws, I knew I could create a better version of the Walking Taco and keep my family happy on Taco Tuesday.
One of the most rewarding parts about meal prepping on Sunday is all the work for Taco Tuesday is already done! This is so helpful for the busy family who has to get to soccer, basketball or hockey right after dinner. We have broken the habit of eating out, almost completely, thanks to meal prep Sundays. One of our favorite toppings for anything we eat on Taco Tuesday is pico de gallo. It is so fresh tasting and simple to make. Added bonus of making it on Sunday is the flavours marry and creates a more flavourful topping for Tuesday.
Pico de Gallo
- 4 tomatoes seeded
- 1/2 large red onion
- 1/4 Cup chopped cilantro
- 1 jalapeno pepper chopped seeds removed
- 2 limes juiced
- Salt to taste
Chop the seeded tomatoes and onions so they are smaller than bite-size. Add the juice of the limes. Mix in the chopped cilantro and jalapeno. Add salt to taste. Place in fridge for at least an hour. Enjoy!
For our latest Taco Tuesday we had a fresh batch of pico de gallo and all of our toppings were ready to go! We cooked up some seasoned beef and had some rotisserie chicken as well. All of our favourite toppings prepared and everyone made their own walking taco bowl using OLD EL PASO Tortilla Bowls I found at Loblaws.
The OLD EL PASO Tortilla bowls are a fun alternative to the nacho chips for our walking tacos. The kids loved eating dinner without plates. I can see this being a fast and convenient lunch for the whole team at the kids boating regattas this summer or hockey tournaments this winter! Another handy idea is to fill the OLD EL PASO Tortilla bowl with scrambled eggs, cheese and pico de gallo for those early morning practices.
Everyone ate their walking tacos in a bowl with forks. I, on the other hand, find it hard to break old habits and ate mine like a taco! 🙂 You can fit a lot of toppings in a tortilla bowl! My youngest took her meal a step further. Miss T grabbed a small taco bowl (the OLD EL PASO Tortilla bowls come in two sizes) and filled it with peanut butter and bananas for her dessert. Miss T gave the whole meal a 10/10.
