I am dreaming of warmer summer weather. The kind of weather that is BBQ friendly. We BBQ during the winter but it is just not the same. In the summer we are all outside enjoying the weather and I love to have a salad with every meal. I found a new love for bok choy lately and thought it would work well in a slaw. This recipe is so simple but the mustard and sesame oil give it big flavour. This will make a great side for a lot of our favorite BBQ meals. It was perfect today for a quick lunch on its own.
Crispy Baby Bok Choy Slaw
1/4 cup Rice Vinegar
1 TBSP Toasted Sesame Oil
2 TBSP Sugar
2 tsp Dijon Mustard
1/4 tsp salt
1/2 to 3/4 Pounds thinly sliced Baby Bok Choy
2 Medium carrots, shredded
2 Green Onions, thinly sliced
Whisk together the rice vinegar, sesame oil, sugar, Dijon and salt. Make sure that the sugar is mixed in well.
In a salad bowl mix the sliced Bok Choy, shredded carrots and sliced green onions. Add salad dressing and toss so the dressing coats the salad well. Sprinkle with sesame seeds to taste.
Add sliced apples to the mix as well. It gives the slaw a nice sweetness and extra crunch.
Substitute honey for the sugar.
Not sure where I learned this BUT after I rinse the bok choy I sprinkle some salt to draw out the bitterness. After a few minutes I rinse off the salt and spin the bok choy in a salad spinner. I have never had bitter bok choy so it must work! I also love to add some bok choy to my Won Ton Soup.
