This recipe I adapted from a meal planning website. I just can not remember which one.
One thing I love about this recipe is that I almost always have all the ingredients on hand. It is also adaptable to use left-over chicken or turkey. I keep meaning to try it with beef. One day I will and I will let you know how it was.
Even the kiddos like this one…. black beans and all!
Tasty Toasty Chicken Tostadas
3 boneless, skinless chicken breast
1 TBSP Olive oil
1/2 Cup Black Beans
1 Cup Salsa ( I like Wholly Salsa)
4 – 8 inch flour tortillas
1 Cup shredded cheddar cheese
1/2 head Romaine Lettuce
1 tomato chunked
2 green onions chopped
cilantro to taste (I like lots!!)
Preheat oven to 375′.
Place chicken on parchment covered cookie sheet and drizzle with oil. Season as desired. Bake until cooked. Cut into cubes. (This is where you can substitute left over chicken or turkey.)
In a bowl mix chicken, beans and salsa.
Place tortillas on baking sheet and sprinkle with cheese. Top with chicken mix.
Bake about 10 minutes until warmed and tortillas are crispy and lightly browned.
I almost always have this dinner ready to go in the freezer. When I make it I make extra for the freezer. The chicken mix freezes well in a sandwich bag. The shredded cheese in another sandwich bag. Place both filled sandwich bags in a large freezer bag with the tortillas. Easy dinner for a hectic work day!
