I love Catelli Healthy Harvest Whole Grain Pastas. Have you tried some yet? I made the switch to whole grain pastas a while ago and the family noticed right away. The whole grain pastas have a great taste to them that we all love. For us the switch was easy.
I have shared some ways to use a store-bought rotisserie chicken before on this blog. I have another great recipe to share with you. This recipe from Catelli is fabulous! All of my favorite flavors are in this dish. The best part? I easily made it kid friendly…. what I did was put some chicken, broccoli and pasta aside for the kiddos dinner. I then gave them some of the sauce in a little dish for dipping. The kids were happy, hubs and I were happy, the perfect scenario for a whine free dinner!
The leftovers were perfect for lunch the next day. It tasted just as great cold!
Chicken in Peanut Sauce Over Spaghetti
1 pkg (375 g) Catelli® Healthy Harvest® Whole Wheat Spaghetti
1 rotisserie chicken, shredded (approx. 4 cups / 1L), skin removed
2 cups (500 ml) broccoli florets (1 small broccoli)
1 tbsp (15 ml) Crisco® Vegetable Oil
1 tbsp (15 ml) ginger, chopped
3 cloves garlic, chopped
4 green onions, chopped
1 cup (250 ml) Carnation® Regular, 2% or Fat Free Evaporated Milk
3/4 cup (175 ml) peanut butter, room temperature
1/4 cup (50 ml) hoisin sauce
1 tbsp (15 ml) soy sauce
¼ tsp (1ml) hot sauce
2 tbsp (30 ml) cilantro or parsley, chopped
1/4 cup (50 ml) peanuts, chopped
- Peanut Sauce: Heat oil in a small skillet. Add ginger, garlic and green onions. Cook for 2 minutes, stirring occasionally, until softened. Cool for 10 minutes
- Combine cooled mixture and remaining peanut sauce ingredients with a wooden spoon or whisk. Mix until smooth
- Cook spaghetti according to package directions. Add broccoli and cook with spaghetti. Drain well.
- Place spaghetti, broccoli, sauce and shredded chicken in a large bowl. Toss well. Sprinkle with chopped cilantro and peanuts. Delicious warm or cold.
